So as usual we had some very ripe, very brown bananas sitting around that no one wanted to eat. I didn’t want the usual banana bread so I decided to try something different. It turned out so good that I didn’t even have a chance to take a picture before it was all gone.
Ingredients
1/2 cup butter
1 cup palm sugar
2 eggs, beaten
4 small ripe bananas, smashed
1 cup wheat flour
1 cup all-purpose flour
3 tsp baking powder
1/2 tsp salt
1 tsp turmeric
1 tsp cumin
3 tsp cacao powder
Directions
Preheat oven to 350 degrees.
In large mixing bowl, cream butter and sugar together until blended. Add beaten eggs and bananas. Mix well and set aside.
In separate bowl, add flour, baking powder, salt, spices and cacao powder. Whisk together. Add flour mixture to banana mixture, and stir until mixture is blended.
Pour batter into a 4×6 greased baking dish. Bake at 350 degrees for about 1 1/2 hour or until toothpick inserted in middle comes out clean.
Serve warm with coconut ice cream or eat alone. Enjoy!
