I was munching on some yummy flaxseed tortilla chips over the week-end and thought it would be nice to have something to dip them in. Quickly thinking of what i had on hand to make a fast dip, greek yogurt and kale came to mind. Immediately, i figured i’d make my own version of spinach dip using some kale and yogurt. The results were quite nice and now this dip a newly requested family favorite. 😉
Ingredients
4 kale leaves, washed, deveined and finely chopped
drizzle of olive oil, enough to coat kale
1 TBSP balsamic vinegar
1 tsp raw coconut vinegar (i used Coconut Secret)
pinch dried red pepper flakes
1 scant cup, Plain greek yogurt
1 TBSP apple cider vinegar
salt and pepper to taste
Directions
Wash, devein and roughly chop kale. Place in a large bowl and rub with olive oil until kale is coated. Add balsamic vinegar, coconut vinegar and red pepper flakes. Stir until well mixed and then set aside. In a medium bowl, add greek yogurt, apple cider vinegar and seasoning to taste. Mix well. Begin to add kale mix to greek yogurt and stir until kale is thoroughly mixed with yogurt. Refrigerate for 30 minutes to let firm and then serve with your favorite bread, chips, or veggies. Eat and enjoy!
