Plantain Patties – Aly’s Test Kitchen

I wanted to do something different with my plantains.  Typically i slice them thickly and deep fry them and serve or i slice them thinly and deep fry them and serve.  I was browsing the web for alternative recipes and didn’t really find much.

I remember making some plantain balls a long time ago where green plantains were used like a dough.  I figured i could make my own variation of that.  Thus, plantain patties were born.

Ingredients

3 large very ripe plantain (the darker the ripe spots, the better)

1 TBSP fresh ginger, chopped

2 cloves garlic, chopped

2 tsp ground turmeric powder

1 tsp Jamaican all spice powder

pinch of sea salt

dash of ground black pepper

2 cups all-purpose baking mix

coconut oil for cooking

Directions

In a large mixing bowl, peel plantain and place in bowl.  Smash plantain with a potato masher or the back of a metal spoon.  Plantain should have the consistency of thick mashed potatoes.

Add ginger, garlic and seasonings and stir to incorporate seasoning into smashed plantain.  Next add baking mix, one cup at a time.  Mix well with large spoon after each addition.

Heat a large non stick griddle pan over  medium heat.  Brush coconut oil on pan with pastry brush.  Rub a bit of oil in palm of hands so that patties won’t stick to your hands.  Scoop about ¼ cup mix into hands and quickly pat into the shape of a round patties.  Place on griddle and cook on each side for about 3 minutes or until dark brown.  Repeat process until all patties are cooked.

Can be served immediately or enjoyed the next day.
