Winter Celery Apple Salad

It’s not quite winter yet but that doesn’t mean i can’t enjoy delicious winter produce.  My newest salad favorite has a mix of celery, apples, dried cranberries and walnuts.  Those foods are great on their on and even better when all mixed together in this delicious salad.  Keep reading to find out how it’s made. 😉

Ingredients

1 TBSP pumpkin seed oil

1 TBSP raw coconut vinegar

½ TBSP apple cider vinegar

1 TBSP pure maple syrup

3-6 Celery stalks, rough chopped

1 large granny smith apple, cored and chopped

¾ cup chopped walnuts

½ dried cranberries

½ dried currents

sea salt and black pepper to taste

Directions

In a large mixing bowl, or salad bowl if serving immediately, add pumpkin seed oil, both vinegars, and maple syrup.  Next add chopped celery, apples, walnuts and dried fruits.  Mix well and add a bit of salt and pepper to taste.  Continue mixing to be sure all the marinade from the bottom is well incorporated with salad.

Serve immediately or cover and let chill about 30 minutes and serve.  Salad is good for about 7 days.  This can be eaten on its own or served on top of plain greek yogurt or sprinkled with ground flaxseed or granola.  Eat well and enjoy. 🙂
