Sometimes we have quite a few leftover bananas that are super ripe. I get tired of making banana bread and banana pancakes, so this go round i decided to make some fritters. Next time you have more than a few leftover and overly ripe banana’s, make some fritters.
Ingredients
3 ripe bananas
1 egg
½ cup maple syrup
½ cup quinoa bran
2 cups flour
½ tsp baking powder
1 tsp ground cardamom
Pinch of salt
Oil for frying (I used sunflower and coconut oil)
Directions
Mash banana and add egg, mix well and add maple syrup.
Add quinoa bran plus 1 cup of four, baking powder, salt and cardamom. Mix well. Add last cup
of flour and mix until all flour is incorporated.
Heat a medium skillet with oil over medium high heat. Drop dough into hot oil by the spoonfuls. Cook on each side until golden brown. Drain on
