So now I’m trying my hand at actually eating fruits and veggies that are in season, meaning not just picking up stuff at the grocery store just because it’s there. Well figs are in season now so I picked some up and decided to bake a cake with them, among other things. It’s really simple and quick to make.
Ingredients
1/2 cup butter
1 cup coconut sugar
1/4 cup organic brown sugar
2 eggs, beaten
1 pint fresh figs, rough chopped
1 cup boiled water
1 cup wheat flour
1 cup all-purpose flour
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 3oz carob bar, chopped
Directions
Preheat oven to 350 degrees.
In large mixing bowl, cream butter and sugar together until blended. Add beaten eggs, water and figs. Mix well and set aside.
In separate bowl, add flour, baking powder, baking soda, and salt. Whisk together. Add flour mixture to fig mixture, and stir until mixture is blended.
Stir in chopped carob bar.
Pour batter into a greased baking dish. Bake at 350 degrees for about 1 1/2 hour or until toothpick inserted in middle comes out clean.
Serve warm and enjoy!
