Impossible Hamburger Pie

So I got this lovely and yummy recipe from the NYC Diva herself Mama April over at Many Faces of Beauty. Because I have a big family, I’m always open to try “one pot” recipes. You know the ones where EVERYTHING is cooked or baked in one big pot or dish and your done. *chuckle*

This recipe was super easy and really really good.  Even the picky Daughters of Destiny eaters enjoyed it.  I would have taken a picture but SOMEBODY *looking at Mr. Richardson* decided to take MY camera on their business trip.  So we’ll just have to use our imaginations.  *chuckle*  Or you can check at Mama April and see what the dish looks like.

Ingredients

1lb ground beef (or any meat substitute)

1/3 cup worcestershire sauce

1 tsp salt

2 tsp onion powder

1/2 tsp lemon pepper blend

5 green onion stalks, chopped

16oz grated cheddar cheese

Topping

2 cups All Purpose Baking Mix*

1 cup milk

2 eggs

Preparation

Season meat with worcestchire sauce, salt, onion powder and lemon pepper blend and then sit aside.  Chop green onion and grate cheddar cheese.

Heat heavy bottom skillet.  Cook meat until done and no pink is visible.  Remove from heat.  Drain any excess oil.  Add chopped green onions and stir.  Cover and sit to side.

Next, in large mixing bowl put 2 cups All Purpose Baking Mix, milk and eggs.  Beat on medium speed with an electric mixer until smooth, about 2 minutes.

In large baking dish arrange meat on bottom.  Next add cheese over meat.  Last pour baking mixture evenly over cheese.

Put dish in a 350° oven and bake approximately 35 minutes or until crust is cooked through.

Makes about 10 servings.

*Here is a recipe for All Purpose Baking Mix if you don’t have any handy.

Ingredients

5 cups all purpose flour

3/4 tsp baking soda

3/4 tsp baking powder

3/4 + 1/8 cup powdered milk

1/2 tsp cream of tartar

1  1/4 cup vegetable shortening

Preperation

In larger mixing bowl sift together all dry ingredients.  Using pastry blender or hands, cut in shortening until mixture is crumbly.

Put into airtight container or large storage bag.  Store in a cool, dry place or place in freezer.  Mixture is good for up to 10-12 weeks.  Can be used in place of Bisquick or Jiffy Mix.
