Nothing better than tacos, especially on a sunny day. Here’s a quick week day meal that’s quick and easy.
Ingredients
½ pound raw shrimp, peeled and deveined (cut shrimp into thirds)
1 tsp adobe seasoning
1 tsp ground turmeric
½ tsp cayenne
salt and pepper to taste
juice from ½ fresh lime
3 TBSP olive oil
½ cup chopped red onion
4 garlic cloves, smashed and chopped
2 TBSP fresh ginger finely chopped
Almond and Cassava Coconut flour tortilla
Garnish; green onions, tomatoes, cheese and plain greek yogurt
Directions
In large bowl mix cut shrimp, adobe seasoning, ground turmeric, cayenne, salt and pepper. Mix, cover and refrigerate. This mix can be made a few hours ahead of time.
Heat large skillet. Add olive oil, red onion, garlic and ginger. Saute on medium high heat until onions wilt. Add seasoned shrimp and saute until shrimp are cooked, a light pinkish color. Remove from heat.
Scoop about ¼ cup cooked shrimp into center of cooked tortilla. Garnish with chopped green onion, tomato, cheese and plain greek yogurt.
This dish can be enjoyed hot or cold.
