This recipe is a basic chocolate chip cookie recipe that I got from one of my favorite cook books, Ultimate Southern Living. I just added some different ingredients to make a healthier version, which is always a hit in our home. Check out the recipe.
Ingredients
¾ cup butter, softened
¾ cup organic raw cane sugar (I used coconut crystals)
¾ cup organic brown sugar
2 eggs
1½ tsp vanilla extract (hazelnut or almond may be added as well)
1 cup all-purpose-flour
1 cup spelt flour
¼ cup teff flour
2 TBSP Whole Whey (or another type of dry protein powder)
1 tsp baking soda
¾ tsp salt
2 (1 oz) squares 99% cacao baking bar, rough chopped
¼ cup chopped pecans
Directions
In a large mixing bowl beat butter and sugars by hand with a wooden spoon until creamy. Add eggs and continue mixing. Add in flavoring and mix well and set aside
Combine flours, baking soda and salt in a small bowl and mix. Slowly add flour mix to butter mixture and stir, mixing well after each addition. Stir in chopped cacao and chopped pecans.
Drop by rounded spoonfuls onto repaired cookie sheet or baking stone. Bake at 350º for 10 minutes or until edges begin to slightly brown. Remove from oven, cool and wire rack, and then eat and enjoy!
