Okay so I was craving a hamburger and just wanted the hubby to run out and buy me a burger and fries from Nations. But him being the health minded person he is, hesitated – and I know what THAT means. So, I ended up sending him out to Whole Foods Market to pick up the ingredients for some hamburgers made with buffalo meat and some stuff for a veggie burger for him.
I found a veggie burger recipe on All Recipe site and just added a few things to make it my own. The result, some yummy veggie burgers that are now a family favorite.
Ingredients
4 TBSP olive oil
1 whole onion, chopped
3 Habanero peppers, seeded and finely chopped
3 cloves garlic, chopped
1 cup Portobello mushroom, finely chopped
2 16oz cans black beans, drained and rinsed
3 TBSP fresh ginger, chopped
1 tsp clove
1 tsp nutmeg
1 TBSP dry herb mix
salt to taste
1 cup cooked rice
2 cups dry bread crumbs
1 egg beaten
Directions
In heavy bottom skillet saute onion, Habanero pepper and garlic in olive oil. Once onion mix is translucent add mushrooms and saute until mushroom are browned, careful not to burn.
In large mixing bowl add rinsed and drained black beans. Next add chopped ginger. Mash beans and ginger with a potato masher to break down beans. Be careful not to over mash beans. Add sautéed onion mix to beans and stir until mixed.
Add seasonings, rice and bread crumbs. Mix well. Next add beaten egg and mix. Once beans are well mixed form mix into nice sized patties. Heat a heavy bottomed skillet on medium heat.
Pour a small amount of olive oil in pan, enough to coat and place patties in pan. Cook patties on each side for approx. 8-10 minutes per side.
Serve with sliced cheese, tomatoes, bean sprouts or whatever garnish desirable.
