Citrus Rose Goat Milk Muffins

I made a huge batch of goat milk ice cream that was infused with culinary rose petals and citrus. After I’d made the ice cream I had a mix of leftover citrus-rose and goat milk so I decided to add them into some muffins.

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup ground dried citrus
  • 1/2 cup ground dried rose petals
  • 3 TBSP dried mint
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup cane sugar
  • 1/2 cup ghee
  • 1 egg
  • 2 cups goat milk
  • 1 TBSP lemon juice

Directions

In a large mixing bowl add all purpose flour, whole wheat pastry flour, dried citrus, dried rose petals, dried mint, baking powder, and sea salt. Mix well with a wire whisk. Next add sugar, ghee, egg, and goat milk. Mix until just combined and add lemon juice.

Line cupcake tin with cupcake liners or use large muffin tins instead. Scoop muffin batter using large spoon or ice cream scooper into each liner. There should be enough batter to make 12 muffins are 6 larger muffins.

Bake in a 375 degree oven until muffins are cooked through, with a nice golden color around the edges. Remove from oven, cool completely, and serve.
