Glazed Donuts

I was over at All Recipes and browsing to see if there was something new I could try to recreate at home. Well I found this GREAT glazed donuts recipe that I just HAD to try. This recipe was fairly easy – minus the glitch I had trying to remove donuts from a flat tray to into some hot oil.

I made them last night and they were a hit. This is yet ANOTHER recipe I’ll add the the book. Enjoy!!!

Ingredients

2 (.25 oz) packets active dry yeast

1/4 cup warm water

1 1/2 cup lukewarm milk

1/2 cup granulated sugar

1 tsp salt

2 eggs, beaten

1/3 cup shortening

5 cups all-purpose flour

vegetable oil for frying

GLAZE

1/3 cup butter

2 cups powdered sugar

2 tsp vanilla extract

4 TBSP milk (or as needed)

Directions

Sprinkle 1 packet yeast over warm water and the other packet of yeast over warm milk.  Let stand about 5 minutes or until foamy.

In a large mixing bowl, add 2 cups flour, sugar and salt and mix.  Add shortening and mix until crumbly or at least until shortening is well incorporated.  Next, add water mix,  milk mixture, and eggs.  Mix well.  Add remaining flour one cup at a time.  Mix until dough no longer sticks to the sides of the bowl.    Turn dough onto floured surface and knead until smooth and elastic.  Place dough, seam side down, into well greased bowl.  Cover with plastic and towel and let rise in a warm and dry place until doubled in bulk.

Turn dough onto floured surface and gently roll into about 1/2 inch thickness.  Cut with floured doughnut cutter or whatever round cutter on hand.  Small center may be cut to make donut holes as well.  Cover loosely and let rise again for about 30 minutes.

Melt butter in medium sauce pan and add sugar, vanilla and milk as needed.  Whisk thoroughly to ensure mixture is smooth.

Heat oil in deep fryer or large dutch oven to about 350 degree.  Oil needs to be hot in order to fry the donuts properly.  Carefully slide donuts a few at a time into hot oil using a wide spatula.  Turn donuts over as they rise or lightly brown on each side.  Remove from oil and drain on wire rack.

Dip donuts into glaze while hot and sit on rack to drain off excess glaze.
