Crock Pot “Meaty” Chili Beans

Ingredients

1     12oz package of ground meat substitute (none soy based), thawed

3     TBSP “no-salt” seasoning mix

3     TBSP onion powder

1     TBSP ground ginger

1     TBSP Garam Masala

1     TBSP lemon pepper

1     tsp turmeric

1     cup pureed tomato

1     cup vegetable broth

1     15oz can kidney beans (with juice from can)

1     15oz can garbonzo beans (with juice from can)

1     large tomato rough chopped

1/2   onion chopped

2     celery stalks chopped

2     carrots sliced

1/4   cucumber chopped (optional)

salt to taste

Directions

Add thawed ground meat substitute to large bowl and next six ingredients.  Mix well, cover with lid and refrigerate for about an hour.  May need to add about 1/4 cup of liquid to moisten meat.

In large crock pot, on medium high, add seasoned meat substitute, tomato puree and vegetable broth.  Stir to incorporate ingredients.  Add kidney beans, garbonzo beans and next five ingredients.  Stir and cover with crock pot lid.  Let chili mixture cook for about a half hour on medium high.  Stir mixture, and then turn crock pot on lowest setting.  Let simmer for about an hour.  Add salt to taste if desired when ready to serve.

Can be served with corn bread and rice.  Eat and enjoy!
