While picking up a few things at the grocery store today i happened upon a large bag of what looked like some jumbo sized sprouts. Upon closer inspection, they were sunflower greens. I’d never heard of sunflower greens but they looked really good so i picked up a bag and threw them into my cart.
Since it was too late for me too cook anything once i got home i decided to make a quick salad with my new greens. It was really quick and took me about 10 minutes total to make. Plus it’s really healthy and was probably one of the best salads i’ve had in a long time, well besides the watermelon salad i ate on Friday 😉
Here’s what you’ll need to make your own delicious salad.
Ingredients
champagne vinegar
raw honey
extra virgin olive oil
salt and pepper to taste
Organic sunflower greens
red onion, thinly sliced
1 avocado, cut into chunks
feta cheese, crumbled
Directions
In salad bowl add about 2 or 3 TBSP of champagne vinegar, about 1 TBSP honey and 1 to 2 TBSP extra virgin olive oil. Whisk until everything is incorporated and then add salt and pepper.
Next add about 3 to 4 hand fulls of sunflower greens, as many thinly sliced red onions as you like, avocado, and 2 palm fulls of crumbed feta. Mix to coat salad in dressing and serve. Eat as is, serve as a side dish or layer mounds on top of some freshly baked bread for a delicious sandwich. However you serve it, i’m sure you’ll enjoy it!
