Apple Pull Apart Bread with The Daughters of Destiny (video)

The Daughters of Destiny and i made some yummy apple bread from a recipe shared on one of my mommy sites.  We made it together in our kitchen, which was really fun.  This is a simple recipe and takes no time to make at all.  It’s best served hot and fresh from the oven.  Apples are in season now, so it’s a great recipe for using this yummy fall fruit.

Ingredients

for apple filling

  • 6 apples, peeled & diced (we used 2 pears as well)
  • Juice of 1/2 a lemon
  • 1 cup packed organic brown sugar
  • 1 tsp vanilla
  • 4 TBSP organic unsalted butter
  • 1 TBSP cinnamon
  • ½ TBSP nutmeg
  • Pinch of ground ginger
  • 1 TBSP potato starch mixed with 2 TBSP warm water

for dough

  • ¾ cup milk
  • ¼ cup organic unsalted butter
  • 3 cups unbleached-all-purpose flour (plus more for work surface and kneading)
  • 1 package yeast
  • ¼ tsp salt
  • ½ cup packed organic brown sugar
  • ¼ cup water
  • 1 organic egg, beaten
  • 2 TBSP organic unsalted butter, softened

Directions

In a large pan, combine the apples, lemon juice, sugar, vanilla, butter, and spices.  Mix the potato starch and water together, then add to the mixture.  Bring to a light boil and cook for 3-4 minutes.  Reduce heat and simmer for an additional 2-3 minutes, continually stirring.  Set aside to cool and thicken.

To make dough: Grease and flour a baking pan. In a small saucepan, bring the milk to a simmer — just until bubbling. Remove from heat and add 1/4 cup butter, stirring until melted. Set aside.

In a large, whisk together the flour, yeast, salt, and brown sugar. Add in the water, egg, and milk/butter mixture. Mix until a ball forms. Add more flour to help it come together if needed. Use your hands at this point as dough will begin to stiffen.

Remove the dough from bowl and place on a well floured surface. Knead for 5 minutes, adding more flour to keep the dough from getting sticky or sticking to your hands or counter.  Roll out into a large rectangle — about ¼ inch thick. Spread 2 TBSP butter over the dough then spread the apple mixture over it evenly. Reserve about ¼ cup of apple mixture.  Using a pizza cutter, cut about 4×5 inch pieces of dough.  Stack your pieces into the pan by laying then on their side. Set the pan down and spread the pieces out so they fill the entire pan.  Use the reserved ¼ cup apples to spread on top.

Bake for 55-60 minutes at 350° or until golden brown. If the apples on top start to brown or burn, cover the loaf with foil.  Let cool in pan about 10 minutes and then serve!
