There was this cafe my Hunny and I used to frequent called Lin and Lu’s. It was on Grand Ave. in Oakland, CA near Lake Merrit. The only thing my hubby EVER ate there, were the oatmeal pancakes. Well when we moved away – we couldn’t find any place that did oatmeal pancakes like Lin and Lu’s. So I decided to look up a recipe and make some at home. Well they INSTANTLY became a family favorite. Now my oatmeal pancakes are “the best i every had” says hubby. 😉
Ingredients
1 1/2 cups rolled oats
2 cups buttermilk
1/2 cup flour
1 tsp sugar
1 tsp salt
1 tsp baking soda
2 eggs beaten
Directions
Combine rolled oats and buttermilk in a large mixing bowl. Add eggs to oat mixture. Combine flour, salt, baking soda and add to mixture. Stir until all ingredients are incorporated. Cook pancakes on hot griddle, turning on both sides. Makes about 12 pancakes.
