Yummy Belgian Waffles

http://farm4.static.flickr.com/3086/3159023302_8a5b00d4a1_o.jpgI found this Belgian Waffle recipe in my most favorite cook book I own, Southern Living Cookbook and decided to make them on my Hunny’s birthday in December. Well they were such a hit that they’ve become a staple – as in “ohhh mommy’s making waffles YUMMY” LOL

Ingredients

4 large eggs, separated
2 TBSP sugar
3 TBSP butter, melted
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 cups milk

Directions

Beat egg yolks and sugar at medium speed with an electric mixer until thick and pale. Add butter and vanilla, beating until blended. Combine flour, baking power, and salt. Add flour mixture and milk to egg mixture, beating until smooth. Beat egg whites until stiff peaks form; fold into batter.

Cook in a preheated, oiled Belgian waffle iron until golden.
