Sprouted Buckwheat Grouts and Flaxseed Salad

Friday i had the yummiest Spelt Berry Salad ever!  We bought some from the Sacramento Natural Foods Co-op prepared food section.  It was so good that i wanted to try to recreate it at home.  I set out trying to find some spelt berries at my local natural grocery.  Of course they had every other kind of grain but not the one i was looking for.  So i had to improvise and what i came up with was even better, according to my hubby *chuckle*

Ingredients

2 cups Go Raw Simple Granola 

1 whole cucumber, cut in chunks

½ red onion, diced

1 purple bell pepper

3 orange mini sweet peppers

2 heirloom tomatoes, diced

¼ cup cilantro, chopped

½ cup dried cranberries

crumbled feta cheese (optional)

Dressing

2 TBSP olive oil

1 TBSP balsamic vinegar

1 TBSP dijon mustard

2 tsp pure maple syrup

salt and pepper to taste

 

Directions

Rinse Simple Granola in warm water and drain any excess water and add to a large mixing bowl.  Add diced cucumber, onions and next seven ingredients.  Set aside.  In small mixing bowl, add olive oil, balsamic vinegar, dijon mustard and syrup.  Mix well.  Pour dressing mixture over salad mix and toss, toss, toss until the salad is nicely coated.  Salt and pepper to taste and serve immediately or chill under read to serve.  Top with crumbled feta cheese as garnish

This is great as a meal or as a side.
