The seasons of produce is beginning to change as summer begins to come to a close. In my local, natural grocery store i’ve begun to see fresh figs. Now i’m not some huge fig lover who waits anxiously for their season to come around again, however i do think they’re interesting and love trying to come up with new ways to incorporate them into my cooking. That being said, hubby picked up a few for me to do as i please with in the kitchen – the results, were actually surprising.. 😉
Since i was experimenting i don’t have a bunch of pictures of the before and after, only because i didn’t really plan out anything and was just cooking by feel. What i ended up with was a really cool sweet treat that can be eaten frozen or slightly baked. Pretty cool, huh?
Ingredients
Fresh figs, (about 6 or 7)
Dates (about 8-10)
1 TBPS Coconut oil for roasting and about ¼ cup for mixing
¼ cup Maple syrup
¼ cup Olive oil
1 cup gluten-free all-purpose baking mix
¼ cup (or more) Hemp seed
½ oz. bittersweet dark chocolate, chopped
½ cup raisins
Directions
Preheat oven to 350° degrees. Line a baking dish with foil. Wash figs and add to baking dish. Remove pits from dates and add to baking dish with figs. Lightly rub a bit of coconut oil on figs and dates. Place dish in oven and let cook for about 20 to 30 minutes. Dates should be deeply browned and figs nice and soft to the touch. Let cool completely.
In a blender, add roasted figs and dates. Puree until a smooth paste forms. Add maple syrup and blend again. Remove fig paste from blender into a large mixing bowl. Add coconut oil and olive oil and mix well. Next add baking mix, hemp seed, chocolate and raisins. Stir until all ingredients are thoroughly mixed.
Depending on if you’re slightly baking these treats or freezing them, you’ll need a baking sheet and/or a freezer safe platter. I actually did both.
Baking Instructions: On a small cookie sheet, dropping by the spoonful, place dough about ½ inch apart. Place sheet in a 350° degree oven and let cook about 5-7 minutes or until dough begins to set. Remove from oven and let cool completely. Then eat and enjoy!
Freezing Instructions : On freezer safe platter, place down a layer of wax paper. Add dough by the spoonful. You can shape these but dough will be very sticky so be careful. Place plastic wrap lightly over dough and then place in the freezer for about 5-8 hours or overnight. Then eat and enjoy!
